Pink Pickled Onions

These pink pickled onions are a staple in Mexican cuisine, and are the most delicious burst of zesty, yet sweet flavor. They are the perfect way to depth to just about any dish, and they provide a beautiful pop of color at the same time! The recipe calls for only 4 ingredients, so it’s incredibly simple and achievable for even the clumsiest of home cooks. Add the onion slices to the jar.

Pour the lime juice directly over the onions into the jar.

Add the salt and honey (or maple syrup if vegan) to the jar and vigorously shake until you can see that all of the honey and salt have dissolved.

Refrigerate the onions for at least 2 hours.

For the best flavor and color, refrigerate for 24 hours.

Add to just about any dish imaginable to impart an incredible pop of zesty flavor.

  • 1 red onion, thinly sliced
  • 5 limes, juiced
  • 1 Tbsp honey (or maple syrup if vegan)
  • 1 tsp kosher salt

Instructions
 

  • Add the onion slices to the jar
