Paul's Overnight Pulled Pork

This 4 ingredient (!!) recipe, courtesy of my darling husband, yields truly the best pulled pork I've ever had in my entire life. With just a pork shoulder (or butt), 2L Coca-Cola bottle, 5 onions, and my copycat Lawry's Seasoned Salt, you too can wow your friends and family with this BEST EVER pulled pork!

- 2½ lbs boneless pork shoulder or butt
- ¼ cup Copycat Lawry's Seasoned Salt (link to recipe above)
- 2 L bottle of Coca-Cola
- 5 yellow onions, sliced into ½ inch rings
Rub the Copycat Lawry's Seasoned Salt all over the pork.
Place a handful of onion slices onto the bottom of your crock pot. Place the rubbed pork onto the slices and take another handful and place them around the pork. Transfer the remaining onion slices onto the top of the pork.
Pour the entire 2L bottle of Coca-Cola over your pork and into the crock pot.
Cover the lid and cook on low for 12-18 hours.
Remove the pork and onions from the crock pot and transfer onto a cutting board. Keep the cooking liquid for later.
Shred the pork using two forks (this should be very easy). Roughly chop up the onions into chunks and mix them in with the shredded pork.
Pour your cooking through a sieve into a medium-sized sauce pan and bring to a boil, then reduce to a lively simmer. Cook for about 15 minutes, or until the liquid has reduced to a syrupy consistency.
Place your pork and onions into the reduced cooking liquid and mix until all of the pork is fully saturated in the sauce.
Transfer to a storage container and store refrigerated for about 4-5 days, or frozen for 3-4 months.
